Smooth venus clams or fasolari have a thick, oval shell and are full of firm, crunchy meat. The surface of the shell is smooth and shiny. These clams come from the Mediterranean Sea and are usually eaten raw. They are not very well known in the Netherlands, but are a true delicacy for connoisseurs.
